Did you know that all sugars do not mix the same? It’s all in the crystal cut.
A larger cut (as is the typical presentation when white sugar is colored to be sold as brown sugar) limits the total surface exposed to other ingredients. This makes for either a longer mix time to hope that it has dissolved well or an uneven taste in the final product. Too fine a grind, as is common in white refined sugar, and it can dissolve before full dissemination in the mix or drink. That is why the Circa sugar crystal cut was created. It’s larger than the fine sugar and smaller than the coarse crystals used for “brown” sugar. It’s the perfect balance.
